This Christmas menu cover illustrates a scene more common to New England than Bermuda, perhaps appealing to the Princess Hotel's Northern clientele who winter in Bermuda. A horse-pulled stagecoach full of passengers drives across a snow-covered landscape, away from a yellow house. The menu inside appeals to American and British tastes while also highlighting local produce. Choices include boiled amberfish, sugar cured ham, broiled squab on toast, roast prime ribs of beef, cold tongue, and keroki salad. Desserts include English plum pudding, pumpkin pie, dark fruit cake, pineapple layer cake, lady fingers, and chocolate ice cream. In addition to an extensive wine list, there are also notices for Monday's races at Shelly Bay Track and dancing in the main ball room.
