This Christmas menu cover shows Santa and his reindeer-pulled sleigh flying in front of a red moon. The Hotel Bentley was a luxury hotel in central Louisiana. Among the dishes on the menu are oysters on half-shell, baked pompano, calf sweetbreads, spring lamb loin chops, roast Vermont turkey, suckling pig, and roast prime ribs of beef. Desserts include champagne jelly, English plum pudding, frozen custard, bisque ice cream, fruit cake, and petit fours.
